A Lamb Fillet is basically boneless neck of lamb. It is the well used muscle that runs up both side of the lambs neck helping it to eat and nod. This cut is perfect and has the right about of fat and tenderness for curries, slow cooks ,stews, kebabs and what ever you need boneless lamb for other than stir-fry's as its not that tender.
