Our Pork Chipolatas are all hand knitted by us and using British pork and based upon our own plain sausage recipe. We only use natural lamb skins as they are smaller and give a nice soft crunch.

Its highly likely that chipolatas were first created in France because sausages by that name appear in the 1903 edition of Escoffier's Le guide culinaire, however we will claim them! Chipolatas are prepared as a relatively thin.
