What is a Rack of Lamb?

A rack of lamb or best end comes from the rib area of the lamb. It is the most delicate part of the lambs sirloin to put it into perspective. The way we prepare them means you could essentially cook one of these racks with in 15-20 minutes in a hot oven and leave to rest for 4 minutes. They can be served cu into cutlets or even more simply just cut in half.

How anyone could resist nibbling on one of these we will never know..!
