Pork Belly is a cut from the underside of the pig. It would be the equivalent of the brisket of the pig. Because the pig has not quite got a six pack its belly contains a lot of fat which is perfect for slow cooking and roasting.
Pork belly is particularly popular in Hispanic, Chinese, Danish, Norwegian, Korean, Thai and Filipino cuisine
