Traditional Farmhouse Gammon
Our farm house Gammon is created using British free range pork using a 100+ year old traditional method. Since the farm house we use is in Wiltshire this makes it a genuine Wiltshire Gammon. The process requires less nitrates and the smoking process uses a traditional oak smoker to give it its flavour.
Modern techniques of curing require lots of nitrates and the Smokey flavour they have in the brine...it is just brushed with a brown food colouring to give the gammon its Smokey look...beware of imitations!
